What’s For Dessert? Gluten-Free Turtle Brownies!

Why We Love It

We love a good brownie! This recipe takes brownies to a whole new level with caramels, nuts, and extra chocolate.

  • 1 package gluten-free brownie mix (enough for an 8×8 or 9×9 pan)
  • Ingredients called for on brownie mix box
  • 25 gluten-free caramels, unwrapped (we used Kraft caramels)
  • 2 tablespoons whipping cream
  • 1 cup gluten-free semisweet chocolate chips
  • ½ cup coarsely chopped pecans or peanuts

  1. Heat oven and prepare brownie mixture as directed on box. (We recommend a 350° or 325° oven.)
  2. Grease an 8×8 or 9×9 baking pan. Spread about 2/3 of the brownie mixture on the bottom of the pan. Cook for about 10 minutes.
  3. While the brownie mixture is baking, place the unwrapped caramels and whipping cream in a microwave-safe bowl. Microwave for about two minutes on high, stirring every 30 seconds, until the mixture is smooth.
  4. Remove the brownie base from the oven. (Leave the oven on.) Drizzle the caramel mixture over it. Sprinkle half the chocolate chips and half the nuts over the caramel. Then, drop the remaining brownie batter by spoonfuls on top of the chocolate chips and nuts. (It will probably appear quite sparse, but don’t worry – it all bakes together nicely!) Finally, sprinkle the rest of the chocolate chips and the nuts over the brownie mixture.
  5. Place pan in the oven at 325° for an additional 20 minutes, until brownie mixture appears dry on top.
  6. Serve warm and enjoy!

  • Carefully read the ingredient list on packages of nuts as they are often cross-contaminated with wheat. We used Barbour’s coarsely chopped peanuts.
  • The original recipe calls for Betty Crocker gluten-free brownie mix, which is currently only available in the U.S. (not in Canada). However, if you can get your hands on some we highly recommend it!
  • Why not make it à la mode with a scoop of ice cream? We enjoy Chapman’s line of gluten-free ice cream.

It’s New Product Time at Udi’s!

Udi’s is one of my favorite gluten-free brands. I always have their pizza crusts and a loaf of their bread on hand. I love their Chocolate Chia muffin tops as a treat, and their hot dog and hamburger buns are a must-have in the summer. They’re also very allergy-friendly: most of their products are also soy, nut, and/or dairy free! They are even certified kosher.

With all that in mind, it’s no wonder that I got excited the other day when they announced some new products hitting the shelves. The list includes granola bars, single serve pizzas, and tortillas! There’s no guarantee that we’ll see those products up here, but we can certainly hope. (If you’re not sure where to find Udi’s around you, they have a store locator that actually works in Canada! I find that the Sobeys stores in Metro have the best fresh selection.)

As a side note, their website also has tons of resources. One of my favorite features is the links on the home page asking why you’re interested in the gluten-free diet. We also love the recipe search that is extremely customizable.

We’re looking forward to more Udi’s products hitting the shelves, and we’ll keep you up to date as we see new items!

Gluten-Free Goodies in New Glasgow

A new gluten-free bakery has come to my attention! Gluten-Free Goodies is now open for business and has goodies at the Saturday Farmer’s Market in New Glasgow. They will also do orders for delivery.

I haven’t tried their goods, but a friend of mine (whose aunt is part owner of the bakery) swears that she’s an amazing chef and that her gluten-free goods are likely delicious. They often offer free samples at the New Glasgow Farmer’s Market, so you can try before you buy!
