In the months before I was diagnosed with Celiac disease, I discovered gravy. My favourite treat was KFC’s popcorn chicken bowls. Of course, they became off-limits as soon as I was diagnosed. However, I quickly came up with a gluten-free version that tastes just as good and is way better for you! It’s also a great way to use up leftovers after a big dinner.
I saw this recipe on Kraft Canada’s website the other day, and it immediately grabbed my attention. Not only is it gluten-free and vegetarian, but if you use a dairy-free whipped topping substitute, it can be lactose-free too! Also, its light, fruity texture will be fantastic for summer.
Here is my version of Fast Fruity Delight.
Chives Canadian Bistro has long been on our list of places to visit, and we finally made our way there early in May. Before I get into talking about our experience, be aware that their menu changes with the season. However, it is visible online here. Gluten-free and vegetarian offerings are marked on the online version and in-house version.
I had checked out the online menu before making a reservation, and what I saw made my mouth water. In addition, five of the six appetizers are gluten-free or can be made gluten free. Four of the seven entrées are also gluten-free or can be made that way.
There has been a huge buzz about Cheese Curds Gourmet Burgers and Poutinerie since they opened in Woodside in February. Lineups have been out the door almost every day. They had to expand after being open for just two weeks. Unfortunately, their initial menu only offered one gluten-free option: a veggie lentil and bean burger with no bun. Yuck!
However, one thing that Cheese Curds has quickly become known for is caring about each customer. We’ve been in touch with them several times to ask about gluten-free options and suggest a local bun source, and they have always been happy to hear our comments and apologetic that they couldn’t do more. This past Monday (May 7), they launched an official set of gluten-free options. We had to check it out!
Update! It looks like Cheese Curds Gourmet Burgers and Poutinerie has a veggie (lentil and bean) burger as well as a gluten-free beef burger, both available on gluten-free buns. We plan on checking it out soon and sharing the results!
Did you know that May is Celiac Awareness Month? As a result, there are lots of things going on. The IWK Health Centre is having Maritime Celiac Day on May 5. Read more here!
On the opposite coast, the 2012 National Canadian Celiac Association Conference is taking place from May 25 – 27 in Kelowna, B.C. Looks like there will be lots of interesting speakers and topics, so if you’re in the area, it might be worth a visit!
I hope all our readers have a happy and healthy Celiac Awareness month!
