What’s For Dinner? Maple-Balsamic Salmon Fillets!

Freeman’s Does Gluten-Free!

Last month, we visited Freeman’s Little New York on Quinpool Road with some family members. (They also have locations on Grafton Street downtown and in Fairview.) I was fairly surprised when we sat down and there was a sign advertising new gluten-free pizzas! When a server came by to take our drink order, I asked about toppings, and was even more surprised when she said they had a gluten-free menu.

It’s New Product Time at Udi’s!

Udi’s is one of my favorite gluten-free brands. I always have their pizza crusts and a loaf of their bread on hand. I love their Chocolate Chia muffin tops as a treat, and their hot dog and hamburger buns are a must-have in the summer. They’re also very allergy-friendly: most of their products are also soy, nut, and/or dairy free! They are even certified kosher.

With all that in mind, it’s no wonder that I got excited the other day when they announced some new products hitting the shelves. The list includes granola bars, single serve pizzas, and tortillas! There’s no guarantee that we’ll see those products up here, but we can certainly hope. (If you’re not sure where to find Udi’s around you, they have a store locator that actually works in Canada! I find that the Sobeys stores in Metro have the best fresh selection.)

As a side note, their website also has tons of resources. One of my favorite features is the links on the home page asking why you’re interested in the gluten-free diet. We also love the recipe search that is extremely customizable.

We’re looking forward to more Udi’s products hitting the shelves, and we’ll keep you up to date as we see new items!

What’s For Dinner? Freezer Cooking!

As I’m sure you’ve realized by now, I am in love with my slow cooker. I have a Hamilton Beach 3-in-1 slow cooker that lets me make three different sizes of meals. The one thing that I find challenging is slow cooker recipes that require a lot of prep – who wants to chop a pile of veggies at 8 a.m.? And I never think to do it the night before.

The solution? Freezer cooking! With this method, you spend a few hours chopping veggies, browning meat, and mixing sauces. Then, you place the proper ingredients in Ziploc bags and pop them in the freezer. The night before your meal, take a bag out and thaw it. Then it’s ready to go in the morning!

I’ve found two great sites so far that have lots of freezer meal recipes. Six Sisters Stuff has eight recipes on this page, and you can browse their index for even more ideas. Ring Around the Rosies has several pages of ideas that are all gluten-free! (Note that Pacific Natural soup isn’t available in Canada yet, so you’ll have to find another brand. Or, see this post for ways to make your own!)
