Gluten-Free Chicken Fried Rice Recipe

One thing that I miss is Chinese food. I used to love wontons, fried rice, and chicken balls. Mmmmm! However, this chicken-fried rice dish is super easy and tasty. You can even add other vegetables, such as peppers, water chestnuts, and snow peas, to make a full meal.
This recipe serves two to four people, depending on whether you’re serving it as a meal or a side dish. Don’t be afraid to adjust the proportions of the ingredients to suit your tastes!

Reader Michael told me this morning that Chex Cereal is coming to Canada next month! I did some digging and found this site, which has a picture of Honey Nut and Rice Chex, clearly marked as gluten-free, and different from their U.S. packaging:

Phase I Trial of Celiac Cure is Promising!

News from Phase I of trials for a cure for Celiac disease are in, and the news is good! It looks like Nexvax2 (marketed as a vaccine, but sounds like a cure) allows patients with the genetic form of Celiac disease to return to a normal diet with no side effects. It also looks like this research will help develop more accurate tests for Celiac disease.

I have always had a hard time finding something for lunches, and it’s even tougher now that I have Celiac disease. Although I work from home and therefore have more options than most people, it can still be hard to find something to fulfill that mid-day hunger.
