What’s For Dinner? Honey Garlic Chicken Bites!

Why We Love It

Chinese night is a staple in our house, and this dish adds another item to the menu!

Ingredients – Chicken

  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch chunks
  • 2 large eggs, beaten
  • 1 cup gluten-free breadcrumbs
  • Salt and pepper to taste

Ingredients – Sauce

  • ½ cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons gluten-free soy sauce (like San-J)
  • 1 tablespoon Sriracha hot sauce (you can use less if you like)
  • ⅓ cup water
  • 1 tablespoon cornstarch
  • 2 green onions, thinly sliced
  • 2 teaspoons sesame seeds
  • Salt and pepper to taste

Method

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Lightly coat a 9×13 baking dish with nonstick spray.
  3. In a small bowl, mix together the breadcrumbs, salt, and pepper. In another bowl, beat the eggs. Working in batches, dip chicken into eggs and then the breadcrumbs.
  4. Add chicken to prepared baking dish. Place into oven and bake until golden brown and crisp, about 15-20 minutes.
  5. In a medium saucepan over medium high heat, combine honey, garlic, soy sauce, and Sriracha sauce. In a small bowl, combine cornstarch and ⅓ cup water. Stir mixture into the saucepan until thickened, about 1-2 minutes.
  6. Once chicken is cooked, toss the chicken in the sauce. Garnish with green onions and sesame seeds.
  7. Enjoy!

Tips

  • To make your own crispy gluten-free breadcrumbs, put a few slices of gluten-free bread through the food processor and then toast them in the oven for a few minutes. This is an especially good way to use up the ends of bread!
  • Serve this dish with gluten-free chicken fried rice for a total takeout experience.

What’s For Dinner? Honey-Parmesan Pork Roast!

Why We Love It

This unique combination of flavours comes together to create a rich sauce, perfect for chilly winter nights.

Ingredients

  • Gluten-free non-stick cooking spray
  • 2-3 pound boneless pork roast
  • ⅔ cup grated Parmesan cheese
  • ½ cup honey
  • 3 tablespoons gluten-free soy sauce (we like San-J or VH)
  • 2 teaspoons of dried basil or Italian herbs
  • 2 tablespoons minced garlic (approximately two cloves)
  • 1 tablespoon olive oil
  • ½ tsp salt
  • 2 tablespoons cornstarch
  • ¼ cup cold water

Method

  1. Spray your slow cooker pot with non-stick cooking spray. Place roast in slow cooker.
  2. In a small bowl, combine the cheese, honey, soy sauce, basil, garlic, oil, and salt.
  3. Pour sauce over pork. Cover and cook on low about 7 to 8 hours.
  4. Remove meat to a serving platter and cover with foil to keep warm.
  5. Skim fat from cooking juices and transfer to a small saucepan. Bring liquid to a boil.
  6. Combine cornstarch and water until smooth. Gradually stir into pan and bring back up to a boil. Then, cook and stir for 2 minutes or until thickened.
  7. Slice roast and serve with gravy.

Tips

  • You can also use a bone-in roast for this recipe. Increase cooking time to 8 to 10 hours.
  • For a real Parmesan feast, serve this recipe with Roasted Parmesan Potatoes!

What’s For Dinner? Sweet and Sour Chicken!

This recipe is one of my Mom’s go-to meals, and no wonder! It’s quick to prepare, delicious, and can easily be made gluten-free.

Why We Love It

It can be hard to find gluten-free Chinese food, but this recipe really reproduces that sweet and sour flavour. As well, no breading or frying means this dish is far healthier than the restaurant version.
