Today we are celebrating our first birthday! We would like to say a huge thank you to everyone who has read our posts, shared our blog, contributed news, and shared their comments. Our fan base is still growing strong – we had one of our best days yesterday!

Gluten Freely, a massive gluten-free site run by General Mills, is holding a Baker’s Challenge! 10 recipes are up for the $5,000 grand prize. Since General Mills’ products include Betty Crocker mixes, Chex cereal, Bisquick (U.S. only), and Progresso soups (also U.S. only), there are some neat ideas! I have recently discovered that Chex cereal has many uses. Only the Honey Nut and Rice are available in Canada, but they are very versatile!

I got my first Life Made Delicious e-mail today and it was packed with gluten-free information. My favorite part was their top 10 gluten-free recipes. Right now chicken nuggets are at the top. I would never think of using rice Chex in that sort of recipe, but their results look good!
You can see all their gluten-free recipes here. I am getting lots of ideas for ingredient substitutions in recipes that I have abandoned. I’ll be sure to keep you up to date with what I find and with the results of my experiments!

Chex is now on the Canadian General Mills product page at http://www.lifemadedelicious.ca/en/ProductPantry/Chex.aspx#. There is also a sign-up box for a gluten-free newsletter!
I have also had some confirmed visual sightings of Chex in some Canadian stores. I haven’t seen it here yet, but if YOU spot Chex, please comment or e-mail us and let us know where you found it!

Reader Michael told me this morning that Chex Cereal is coming to Canada next month! I did some digging and found this site, which has a picture of Honey Nut and Rice Chex, clearly marked as gluten-free, and different from their U.S. packaging:

When I was diagnosed with Celiac disease, there were a ton of things that I cut out of my diet that I later re-introduced. I’ve discovered that even if it isn’t marked gluten-free, it might still be gluten-free. It’s just that there are strict guidelines if a product is going to be marked gluten-free that most companies don’t want to follow.
Always be careful when eating food not marked gluten-free. Stick to small portions until you know whether or not the food will bother you. Always pay attention to what your innards have to say! If you react to a food, stop eating it – it’s as simple (and sad) as that.
